Clostridium Botulinum is a gram positive, obligate anaerobe, spore forming, motile rod. It produces botulinum neurotoxin (BoNT) which is the most potent toxin known to man. 1-2 microgram/kg body weight is lethal. C. Botulinum spores are quite hardy and heat resistant. If these spores are present on foods that are cooked at low heat and then stored in sealed containers (anaerobic environment) e.g. cans or ziploc, then the spores will germinate resulting in C.
